A press release that named the bar first
When M Crowd Restaurant Group won Razzoo's Cajun Cafe out of bankruptcy in late December, the press release did something most acquirers don't. It named the bar as the first thing it would rebuild, and it named the people who would rebuild it: "the minds behind Mi Cocina's Mambo Taxi." The wording is deliberate. It's a tell.
Razzoo's filed Chapter 11 on October 1, 2025, carrying roughly $9.65M in secured debt to First Horizon Bank against 2024 systemwide sales of $76.6M. An M Crowd affiliate bought First Horizon's loan position outright three weeks later (the move that let it credit bid), and the sale closed December 29 at $18.8M. Nine of twenty locations went dark. M Crowd kept the bars that worked
The store-level numbers make the selection logic plain. Across 2025, the ten Texas stores M Crowd kept averaged about $39,800 a month in audited beverage revenue. The nine it closed averaged about $24,800. The survivors poured roughly 1.6× the volume of the stores that were cut. The ceiling is Mi Cocina
To understand what M Crowd thinks Razzoo's can become, look at the brand it's borrowing the bar team from. Mi Cocina averages roughly $120,000 in audited beverage revenue per store per month, about 3× what the surviving Razzoo's stores do, and nearly 5× what the closed ones did. The Mambo Taxi alone, by the company's own 2018 account, drives 95% of Mi Cocina's liquor sales.
That gap is the entire thesis. M Crowd paid $18.8M for a chain whose best bars do a third of what its own average bar does, and whose worst bars it has already closed.
Why the bar is the lever
A poured drink keeps roughly 80 cents of every dollar after cost; a plate of food keeps closer to 65 to 70. A batched frozen cocktail compounds the advantage, because it's made ahead, dispensed in seconds, and tastes identical no matter who's behind the bar. That last property is what let Mi Cocina sell more than a million Mambo Taxis in a single year across two dozen locations. It's a program built to scale, which is precisely what a multi-unit acquirer needs.
The new Razzoo's drink list, cut from 38 to 18 with martinis and an upgraded Hurrycane and a Swamp Thang added, is the instrument. The audited receipts over the next two quarters are the scoreboard.
